Siana's food book

Hello! I’m sorry for the lack of a post for a while but as you can expect from a year 10 (now 11), I was nose deep in revision for mocks and songs to learn for concerts etc. and soon after, had a relaxing holiday break. Goodness knows how i’ll get along next year.. Anywho, I’m back with another blog post for anyone who’s interested and this time it’s a ‘book’ so to say, of my own concoctions and twists on food, snacks and drinks. I seem to have lost some of my usual blog post inspiration due to an overload of school bits and bobs so drop a comment below if you have any suggestions or requests. main mouthfuls:

  • A flavour bursting salad

This salad is particular to my own taste and what i have previously enjoyed when making it so feel free to chop and change any ingredients in this or just take them out.

  1. firstly, chop up some lettuce into bite-size pieces and whack them in a bowl along with a handful of spinach and some mixed leaves if you have them
  2. next, chop in half a large handful of baby plum or cherry tomatoes and put half of them in the bowl on top of the leaves. Sprinkle with salt if you feel necessary and drizzle some balsamic glaze
  3. now take a large handful of spinach, a large handful of kale, some basil, a finely sliced clove of garlic and the other half of the tomatoes and sling them in a frying pan with a drizzle of oil (i use good oil) and the same again with balsamic vinegar (i use a spray balsamic vinegar just to tint the flavour)
  4. once the leaves in the pan have become limp and the garlic looks golden, tip the contents of the pan on top of the leaves in the bowl
  5. drizzle some more balsamic glaze over the top and If it suits you, grate either mozarella or goats cheese lightly over the top. Feel free to add more basil

now grab a fork and enjoy!

  • tortilla wrap pizza

This is a dough free version of a normal pizza for a lighter feel

  1. Take a plain tortilla wrap and smother the surface with tomato paste as you would a pizza
  2. liberally sprinkle grated cheese of your choice over the paste
  3. now add the toppings of your choice, i like to go for salami, chopped tomatoes, ham, chicken.. anything that takes your fancy
  4. put in the oven at 180 degrees C until you feel it looks well done (possibly about 15 minutes give or take a few)
  5. not slice it up into pieces and enjoy your pizza without the shame of so many carbs

  • cheese and tomato toast

i used to enjoy this one a lot for breakfast, it is a delicious twist on plain cheese on toast.

  1. grill the normal cheese on toast as you usually would
  2. while waiting for it to melt, chop a large tomato into small pieces
  3. while its still warm, place the chopped tomatoes on top of the cheese on toast then sprinkle some salt, pepper and chopped basil leaf
  4. for a different variation, add poached eggs to toast with the tomatoes and basil then sprinkle cheddar over the top

sweet treats:

  • pumpkin spice cupcakes

These are a perfect twist on a normal cupcake if you’re an autumn fanatic like me (who has made them every year since she discovered the easiness of them)!

  1. mix the normal ingredients you would to make vanilla cupcakes
  2. in a separate small bowl, mix together pumpkin spice, i use a recipe i found online:   3 tablespoons ground cinnamon, 2 teaspoons ground ginger, 2 teaspoons ground nutmeg, 1 ½ teaspoons ground allspice and 1 ½ teaspoons ground cloves.
  3. add as much of the spice as you feel necessary (for me about one tablespoon should do) to the normal vanilla cupcake mixture and mix well
  4. place in the oven for the normal instructed time in your vanilla cupcake recipe
  5. top with homemade vanilla buttercream icing and sprinkles of your choice or even a light dusting of leftover pumpkin spice

  • sweet fruit bowl

This is a delicious, slightly healthier option which still has plenty of sweetness to it

  1. Gather a few of your favourite fruits – i like raspberries, strawberries, chopped apple, canned pineapple and a  few blueberries for this one
  2. now add whatever topping you fancy – drizzle melted chocolate, syrup, dessert topping sauce, yoghurt or anything similar. then add sprinkles, chia seeds, chocolate chips, marshmallows and many more
  3. now you have a sweetified fruit bowl that treats you with a side of some of your five a day

  • mini meringue drops

These are a small, light kick of sugar that melts in the mouth to give your day a delicious sweet buzz

  1. whisk together 3 egg whites
  2. whisk in 5oz of caster sugar
  3. add food colouring and flavouring of your choice
  4. scoop into a piping bag and pipe small peaks onto a lined baking tray
  5. bake for about an hour until the outsides are crisp
  6. dip the bottoms in melted chocolate if you please and cover with sprinkles

drinks for clinks:

  • maple milkshake

a sweeter intake of calcium

  1. simply pour a glass of milk and add a dash of maple syrup
  2. stir until well mixed
  3. for extra thickness and flavour, blend with some ice cream or plonk some into the glass to float
  4. add a straw and you’re good to go

  • fruity mocktail

This is a delicious, fruity way to cool down and get a vibrant taste on a summers day

  1. pick a fruit juice of your choice (i like mango and orange) and pour into a jug until it is a third full
  2. add a tbsp of a syrup of your choice, this could be lemon, raspberry, lime etc (my favourite is grenadine)
  3. now for extra flavour, add a dash of your favourite squash or cordial (i find that lime works very nicely)
  4. top up the jug with soda water, normal water works fine but if you want that extra zazz then go for sparkling!
  5. add a few ice cubes to keep it cool and finally, pour the mocktail into a tall glass, add a straw and even a slice of lemon or sprig of mint if you’re feeling extra groovy

  • ways to spice up coffee

occasionally, especially in the winter months, i want to spice up a normal coffee to suit the season or because i feel as though i want to. here are a few ways you can do so

  1. syrup, many places offer a wide selection of syrups for hot drinks, just like the ones you might find in starbucks, costa, or other coffee shops. I tend to add a splash of cinnamon or gingerbread in the autumn and winter, then maybe sometimes a little caramel or vanilla all year round
  2. drizzle a little caramel or chocolate sauce over the milky froth, or even some cream (as mentioned later)
  3. find a mini sieve and get cracking with the sprinkling! do the professional ole chocolate dusting trick like in cafes or in autumn and winter, you could even use the pumpkin spice i mentioned earlier! Grating chocolate is a brilliant alternative to this also!
  4. whipped cream! (and sprinkles) If, like me, you get easily jealous of those pretty, A* worthy hot drinks in beautiful mugs with all the aesthetic all over instagram, then this is the one for you. Simply swirl a big squirt of whipped cream all over the top of your drink and add any topping of your choice. for example: cocoa powder, chocolate sprinkles, caramel drizzle, a flake, wafers, you can even find gold sprinkles to put on there! this is your chance to go all out.

light bites:

  • homemade garlic bread

A delicious side order made even more delicious with a loving hand, it could also be had as a main course since it is rather filling.

  1. slice (halfway) a part baked ciabatta evenly into small slices
  2. finely chop two cloves of garlic and mix in with a knob of butter to create a homemade garlic butter
  3. spread this into the slits in the ciabatta
  4. grate some cheese and stuff into the slits along with the butter, sprinkle any leftover on top
  5. bake in the oven until crusty and golden (preferably for the suggested time for the ciabatta)
  6. serve on a wooden board to tear and share

  • sweet potato chips

a yummy alternative to usual fries

  1. peel the sweet potatoes and chop into chip sized pieces
  2. spread over a baking tray and drizzle a little oil over the top
  3. season with salt, pepper and any garnish you wish
  4. pop in the oven until crispy and browned at the edges
  5. serve with a dip of your choosing
