Pumpkin Spiced Cupcakes recipe

Hello and welcome to THE blog post all about my famous Pumpkin Spiced Cupcakes (without the use of actual pumpkin)!
I'm going to be walking you through how I make my delicious cupcakes at top quality!

Ingredients

Cakes:

  • (150g/5 oz) Unsalted butter
  • (150g/5 oz) Caster sugar
  • (175g/6 oz) Self raising flower
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • A sprinkle mixed spice

Buttercream Icing:

  • (150g/5 oz) Unsalted butter
  • (250g/8 oz) Icing sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk

Cakes Method:

  1. Line 12-section bun tray with muffin cases (to be extra big)

  2. Pre-heat the oven to 180 C

  3. Mix together the butter and caster sugar with an electric whisk/mixer at high speed for 5 minutes until the mixture is light in colour and airy

  4. Add all other ingredients to the bowl and mix together at a medium to high speed for 1-2 minutes until well mixed so it looks like this:

  5. Distribute the mix evenly into all 12 cake cases.

  6. Bake in the oven for 18-20 minutes until risen and slightly firm to the touch. You can test this by piercing the cake with a skewer and noticing if there is any mixture stuck to it after pulling it out, if there is, they need another minute or two.

  7. Transfer cakes to a cooling rack and leave for 20 minutes to cool until they are completely cool.

Buttercream Icing Method:

  1. Mix all ingredients together with the same mixer for 5-6 minutes until light and airy

  2. If you're feeling extra autumnal you can add some ginger and cinnamon to the icing too!

  3. Fill a piping bag (with your chosen nozzle) with the buttercream and twist the end to secure.

  4. Pipe the icing evenly onto all 12 cupcakes in your chosen style

  5. Apply any chosen decorations or sprinkles to your iced cakes, I used pumpkin sprinkles and gold confetti sprinkles!

  6. Eat them!!!
